Here's how to configure the ViViPOS to 

allow items to print on the kitchen docket and NOT appear on the customer's bill

Mirror the settings shown above for the Receipt Tab

Create instructions as products with *** as the prefix

And the result is shown below 
***Rush Order message is printed on the kitchen order, but does not show on the customer bill.
